3 ears fresh corn, shucked
1 cup tomatoes or cherry tomatoes cut in half chopped
1/2 cup fresh mozzarella balls
1/3-3/4 cup basil pesto
to taste salt and pepper
Cut kernels from fresh corn into a medium sized bowl. Add tomatoes and mozzarella balls and stir to combine. Toss with pesto, add salt and pepper to taste and add more pesto if desired.
