1 bunch kale, washed and stemmed
1/2 cup toasted nuts (almonds, pistachios, or walnuts)
1/4 cup unsweetened dried cherries or apple juice sweetened dried cranberries
1 tablespoon hemp seeds
1 lemon, zested and juiced
1/4 cup extra virgin olive oil
1 clove garlic, pressed
1 teaspoon sea salt
Finely chop the kale. In a rush? Use half a bag of shredded kale from our produce department!
Place the kale in a large bowl and add lemon juice, lemon zest, olive oil, garlic, and 1 teaspoon of salt.
Wash hands, then massage mixture until kale is softened, about 1 minute.
Add nuts, dried fruit, and hemp seeds. Toss to combine ingredients.
Before serving, taste and adjust seasoning with salt, pepper, and more lemon juice if needed. You can serve immediately, or let the salad rest for 15-20 minutes to allow the flavors to meld.
